Fish Kavurma

While many traditional centrepiece and family-style dishes rely on heavier meats, the coastal areas of Turkey offer a lighter, more refreshing tradition rooted in the sea. This Fish Kavurma recipe, shared by the very talented chefs at Dubai’s Bordo Mavi, is a vibrant celebration of those seaside flavours, designed to be placed at the heart of the table and enjoyed collectively.

Exploring the warmth of Mediterranean family gatherings, this recipe reinterprets the classic Kavurma style by gently cooking fresh seabass fillets in a premium blend of extra virgin olive oil and full-fat butter. Fish Kavurma 1

Ingredients (Serves 4)

  • 2 pieces or 600g of seabass fillets, cut into chunks
  • 6g of garlic cloves, finely diced
  • 90g of cherry tomatoes
  • 2 white onions, chopped into chunks or slices
  • 1 green or red pepper, chopped into chunsks
  • 130g of extra virgin olive oil
  • 40g of full fat butter
  • Chilli flakes to flavour to your preference
  • Salt to flavour to your preference
  • Fresh thyme, chopped to flavour
  • Fresh parsley, chopped to flavour

Method

  • Season the chunks of seabass with salt
  • Add olive oil to the pan and half of the butter
  • Sauté the onion, garlic
  • Once sautéed, add the peppers
  • Add in the fish, and season to your taste with salt and chilli powder, and let the fish cook through for 4 - 5 minutes
  • Then add the cherry tomatoes and the other half of the butter
  • To finish, garnish with freshly chopped parsley and thyme
  • Serving recommendation: serve alongside white rice or fresh bread
